The default setting is to send HTML email. If you do so, the recipients will likely regard you as an idiot. To send plain text, go to Email inbox->Tools->Settings->Composing and choose plain text.

The bundled Modest email client can support just about any reasonable POP3 or IMAP4 server for inbound, and even has per-connection custom SMTP servers for outbound if you need that.

If you are creating a new email account just for this device, you could do worse than GMail. You have to take the word of a big faceless corporation about privacy, but it's free and accessible in a whole bunch of ways.

If you get a popup saying "Internal error: application E-mail closed" then you are experiencing Bug 2968. This is fixed in the OS features update release on 11 August 2008 (Diablo SSU 4.2008.30-2); apply this update via Application manager. If you cannot upgrade, a workaround is to disable automatic periodic checks for incoming email. To do so, go to View email inbox then from the menu, Tools->Settings... and uncheck Update automatically.
