Below is a list of some of the applications I have installed on my N810 that, for me anyway, do what they claim to do with minimal hassle. This list is meant as a jumping-off point for new users, not an exhaustive catalog. (Omission of something from my list is in no way a suggestion that the thing in question is useless.)

Some of these can be downloaded through the Application manager, once you enable the Maemo Extras repository. For the rest, check the Maemo Garage.

agps-ui
Helps the built-in GPS get a fix faster by giving the chipset hints about your approximate location.
camera
Lets you take snapshots with the built-in webcam. This isn't going to replace your DSLR, but it's better than nothing.
gpe-calendar
A calendar application, since the N810 doesn't come with one bundled for some reason. You can get add-ons to sync this with various external calendars, though I have not tried these.
gpe-contacts
An address book / PIM application.
vncviewer
Lets you view and manipulate the desktop of another computer. For Win32 hosts, install TightVNC. (Be extremely careful about security when setting up the server side.)
switchOnBT
If you sometimes use bluetooth peripherals, but usually keep the N810 bluetooth radio turned off to save battery life, you need this. Turning bluetooth off is easy; click the panel icon. To turn it back on, use switchOnBT. (The alternative is to go through Settings->Control Panel->Bluetooth which is a hassle.)
Password Safe
Like Strip for PalmOS, this is an encrypted password store. That's Password space Safe; there's another project called PasswordSafe (no space) that doesn't have any files yet.
Mauku
Client for Twitter and Jaiku micro-blogging services.
mytube
Brilliant YouTube search and viewer utility. I think I like this better than using a browser on my desktop PC.
kmplayer and worldtv99
Media player, and a playlist that lets you play back live TV from around the world.
maemo-mapper
Display tileset based maps from Google, Yahoo and more. Downloads map tiles as needed over the 'net, so not as useful when running offline.
iphome
Show the current IP address and traffic stats on the home page. Much nicer than the "homeip" app. To get it, add the Chinook repository from MUlliNER.ORG.
personal-menu
Flexible, configurable program launcher; lets you see more at a glance and start apps with fewer taps.
